Video Monday #1 - The Mind of a Chef - Kimchi Party

Hey guys!

So I'm gonna do this thing where I share a cool video with you every Monday.

You know, to give this blog some semblance of consistency.

This week I stumbled across a really cool series called Mind of a Chef, from the creators of 'No Reservations' by Anthony Bourdain. Basically they follow a chef around for a couple of episodes to give the viewer a sense of immersion in the world of a culinary heavy weight. I watched the David Chang episodes, father of the Momofuku chain of restaurants. Yes, that Momofuku. Crack pie land. It's amazing, I highly recommend any food enthusiast to watch it.

This particular video however has nothing to do with David Chang. It's this Korean lady making Kimchi. In what has to be the most entreating way ever. I invite you to sit back and enjoy this bewildering video of a woman making fermented spicy cabbage...you won't regret it.

End of Juice Fast!!

It's February 17!! Today I end my juice fast!!

I feel excited yet bittersweet. Don't get it twisted, I'm not about to drive to Elevation Burger to get a sandwich just yet. Lol. To break a juice fast safely you need to stay on raw fruits and veg for about 1-3 days, and that's what I plan to do. In a week's time I can introduce fish and chicken back into my life. Soaked nuts and seeds are welcome too. So those are the minor details.

Mayjor details are the fact that I feel bloody fantastic! My skin radiates with the light of a thousand suns. Not even a giant tub of La Mer can do for me what a month of juicing did. Honest. I lost over 10kgs of my body weight. I run faster. I breathe better. In short, I am that much closer to the person I want to be. You guys, forget knowledge is power...food is power. Well, with the proper knowledge about food, you gain the power of course. Gives a new spin on the term Power Hungry eh? No? Just me? Heh...oh well I tried.

No but for real, if I learned anything from this experiment/process it's that food is either medicine or poison. It's up to us to decide what to do with it. Our modern world is riddled with high cal, high carb, high fat, low nutrient foods that we are sure to lose ourselves in the jungle of mono-saturated fats. I mean, sure, you can enjoy a chocolate cake on your birthday if thats your thing, but you can't go get your weekly fix of McCain Chocolate Cake from the grocery store. You know who you are...

I went on the juice fast to reboot my body. And I did. Not only that, I ended up rebooting my mind and soul as well. Bonus! There were a myriad of illnesses just waiting to use my body as a host and I chose to shut the door and lock it. I chose me. A healthy me. And I hope some of you are inspired to at least give a 1 day juice cleanse a try. If you could do 3 days then kudos to you! I guarantee that by the end of it you'll notice subtle changes in your body and overall mood. Not to mention, give your body a break from meat and sugar and whatever else you've been doing.

Just to be clear I'm not going to be an annoying health nut. I will just check myself before I wreck myself, ya dig? After all, I do plan to stand in that infamous cronut line in about a month's time. So watch this space...
